Vegan Avocado, Onion, Tomato Sandwich With A Little Kick
It’s been such a crazy couple months I honestly cannot believe Thanksgiving is in a couple of days and Christmas is next month! During our transition to North Carolina from Colorado, I haven’t been eating as well as I used to and it’s catching up to me to say the least! I finally started to run again and it feels amazing. My legs however feel not so amazing 🙂 After my run today I went for a simple, yet delicious sandwich that doesn’t make you feel stuffed but definitely fills you up for a while. I know some of you are probably thinking, “oh great, it’s vegan”, but I’m pretty sure once you sink your teeth in this baby you won’t even remember it’s vegan. Keep scrolling!
Two slices of whole grain bread (or whichever bread you prefer)
Spicy Red Pepper Hummus
One Avocado (medium size)
Half of a Tomato (large size, any tomato will do)
Quarter of a Yellow Onion
1 tbsp. Salt (not pictured)
1 tbsp. Cayenne Pepper (not pictured)
Slice your tomato, onion, and avocado. Toast your slices of bread in a toaster to desire.
(simple, right? :))
Spread your Spicy Red Pepper Hummus on each slice of bread. This is an open-faced sandwich.
Place your cut up onion slices on each slice of bread evenly.
Take a spoon and spoon out half of your avocado on one slice and the other half on the other slice. I pressed the avocado into the bread to make it “stick” a little better so it doesn’t fall out as easily later when eating.
Last but not least, add your tomato slices on top of your avocado, sprinkle with salt and cayenne pepper as desired. The cayenne pepper gives it that extra kick 🙂 I always love spicy.
